Rock's Pork Injection Mix

1 Tbs olive oil
1 Tbs butter
2 large onions sliced 1/2"
10 pepper corns
3/4 cup apple juice
3/4 cup chicken stock
your favorite spices

Put oil and butter in medium sauce pan
on low heat. Add onions, salt and peppercorns. Cover and cook until onions are clear. Add apple juice and chicken stock and bring to boil. Remove the onions and peppercorns and discard. Reduce heat to simmer until reduced by 1/3. Add your spices and cool before injecting.
