Why buy a meat injector?
A meat injector has several advantages over traditional marinating. Instead of just flavoring the surface layer of meat with rubs and marinades, a meat injector allows you to penetrate deep into the muscle fibers and add flavor throughout.
Because of this, marinades (and flavor) won’t burn off or evaporate in the oven or on the grill. As a result, you get a richer flavor profile and more tender meat.
What is the difference between injecting and marinating?
Traditional marinating is typically performed by submerging meat in a marinade for several hours or overnight. This method works well to season the outer layer of meat and does not require any additional tools.
Injection marinating is done with an FDA-approved syringe. Injecting allows you to distribute your marinade into the meat from the inside out. Because flavor is embedded deep inside the tissue of the meat, it won’t burn off or evaporate.
What kinds of meat can I inject?
Food syringes are useful for seasoning beef, pork, turkey, or even small birds like chicken. But they are especially helpful when seasonings naturally dry meats like pork loin, lamb leg, beef round roast, or extra thick pork chops.
What features to look for in a meat injector
Before you purchase a food injector, consider the construction material, number of needles, your budget, and the additional features below.
Food guns are typically made from either stainless steel and zinc or eco-friendly plastic. Both materials have advantages and limitations.
Stainless steel and zinc syringe injectors are sleek and durable. Most stainless steel units come with cleaning brushes, so they are easy to clean and dishwasher safe.
What’s surprising is that more and more manufacturers are selling stainless steel injectors at nearly the same cost as plastic units. So choosing between stainless steel and plastic is more about preference than budget.
Plastic injectors are lighter in hand and have a transparent base, typically with measurement markings. I recommend plastic injectors for anyone new to injection marinating for a couple of reasons.
Because plastic injectors have a transparent base, you always know how much marinade is in the chamber. The measurement markings are also handy because they allow you to track your injection process and eliminate over- or under-seasoning.
Most injectors come with at least two interchangeable needles; others come with as many as six needles.
Each needle has a unique purpose. Those with a wide slanted tip are best for injecting sauces with small spice or herb particles. Closed-end needles come in handy when injecting thinner brines.
Oversized needles allow you to inject chunky sauces and won’t bog down or clog when minced garlic or onions pass through the tip. Lastly, thin-gauge needles are best for delicate cuts of meat because they do not leave holes or damage tissue.
Depending on the design, meat injectors hold between 1.5 to 2 ounces of the marinade in the chamber. Units with a smaller chamber are lighter in hand, but they obviously do not hold as much marinade, so you’ll have to refuel more frequently.
Because there is not a significant difference in weight, I recommend a meat injector with a 2-ounce chamber.
While nearly every meat injector on the market is dishwasher safe, you’ll extend the life of your injector by regularly using a cleaning brush kit.
While injectors clean up nicely in the dishwasher, stubborn garlic and bits of marinade may stick inside the needles and base. A quick scrub with a micro cleaning brush keeps injectors functioning and eliminates clogs.
